how do I prepare deer for BBQ?

We have a family friend that BBQs professionally.  He said if I bring him a deer that he'll do it for free.  How should I give it to him?  Should I quarter it?  If it's an 80lb central Texas deer, should I just skin it and give it to him whole?  Backstrap, tenderloin?  Come on, Texans!  Ya'll are the kings and queens of BBQ!

Take loins and backstrap and grill whole yourself.... or chicken fry. Let him smoke the four quarters and the rest of the deer make into hamburger with 15% beef fat

Lamar hit it right on the nose.  Also, if you take the backstrap slice it into 1/2" steaks place 1 layer in a crock pot, cover with onions, carrots, celery, potatoes (all sliced) then your favorite seasoning, then another layer of meat, then the vegetables again , then meat, do this all the way to the top and let cook until done.  It comes out tender and it is easy to cook.  Takes about 4 to 6 hrs.  But the Chicken fry is the best, with mashed potatoes and cream gravey, green beans, Wow.  I know that doesn't answer your question but it sounds so good.  Oh, yeah, you could call the guy up and ask him how he things it would be best to bring him the meat.  He may have a really great way of preparing a whole, or half of deer.  Good luck and post the results.
