Try stuffing it and roasting it whole in the oven. It is unbelievable cooked that way!!

We had them filleted right off the boat and did a big fish fry with about 20 lbs of it.  I still have the rest in the freezer.  I fried most of them, but baked a few of the really large fillets with olive oil, salt and pepper, fresh parsley and lemon.  They were so good.  Nothing like fresh fish for dinner!  Next time I'll try and remember to leave at least one whole.
