Venison Fajitas

I like to begin with the backstrap my favortie. I then soak and merinate in a gallon size bag with buttermilk over night about 12 16hours.I then tranfer the meat into a new gallon size bag and ad a whole bottle of Italin Zesty dressing. I then cut up onion and jalapenos or bell peppers if you prefer and ad them in the bag as well.Merinate for about 2 days in the frig. You must then freeze the meat in order to cut very thin slices of this delictable stuff, before you saute onions and peppers on a comal, use butter to cook venison season with lemon pepper or creole great.Be advised cooking time is very fast depending on the thickness of the meat.Heat corn or flour tortillas and bang it time. Ingrediants 2 3lbs Venison 1 2 buttermilk 1 bottle Italian Zesty dressing 2 yellow onions 3 jalapenos 2 bell peppers 1 2 dozen tortillas corn flour seasoning of your choice enjoy

Deer Sausage Tip

Most recipes I ve seen for deer sausage have called for 1 lb of venison and 1 lb of ground pork. This year I tried something new. I added 1 lb of ground bacon instead of regular pork. The sausage turned out great. I ll use it with all of my sausage recipes from now on. Give it a try

I ve been thinking about this proposed regulation that the Texas Parks and Wildlife Department is considering allow hunters to use silencers and sound suppressors on rifles to hunt deer. I m not sure how I feel about it. I already use a silenced firearm for whitetails. It s called a bow. The real discussion is about rifles altered so that the sound is mostly silenced or suppressed. None of the silencers I m familiar with are totally silent. And all of them compromise the speed and power of the bullet. When you fire a rifle, the bullet leaves the barrel at something in excess of 1,100 feet per second faster than the speed of sound. That crack you hear is basically a small sonic boom. To eliminate that portion of the noise, the velocity of the bullet has to be reduced within the gun, and that impacts the hunter s effective range. It s a matter of physics. The proposal that Texas Parks and Wildlife commissioners have sent to the Texas Register for public comment actu...
