I was told years ago that it was unlawful to hunt on land that was less than 10 acres. Is this true?

people move here from other states and don't read texas law.  except in an incorporated area there is no law against hunting.

I'm a Texas peace officer...that said, you may hunt on any sized parcel of land.  However, you may not shoot across property lines, public roads, fences or other barriers that demark the property line.   This includes bullets that pass through game and continue across the property line.  This also includes shot pellets (yes, even #8 shot) while bird hunting.

The only exception to this would include deed restrictions on the land that prohibit such activity and if the land is located within the incorporated city limits of a municipality.

Just make sure that any projectile leaving your firearm stays on your property.
